For Windows 2008 R2 you have to use WAIK 3.0 + Supplement 1 (adds support for Windows 2008 R2). Have you installed both in your environment?
Probably you are already usng WAIK 3.x, and still getting this error. If that is the case, I guess, you have configured wrong W2K8 R2 installer path in System Package Type configuration. Please check what path have you provided for 'Windows Server 2008 R2 Enterprise x64' System Package Type that is being used in your job.
Does your 'Win2K8 R2' installer really reside at '\\172.16.2.81\pxestore\win2k8'? Or is this a path for 'Windows Server 2008' installer instead of R2?
