Yes, you can but make sure if you choose MAPI as protocol for incoming mailbox for all mailboxes then you can have only one incoming mail box. This is the limitation of protocol not remedy.
Do you mean you want Remedy to watch the inbox of multiple email accounts? Or you want Remedy to watch one email account but for multiple types of emails to do different things?
I can think of some work arounds but they are probably more trouble than they are worth unless you really need to use MAPI
We can go with POP3 in case of multiple incoming boxes, this would be easiest one. If you have any work around for MAPI, i would appreciate if you share...
You would have to have multiple Email Engines installed. Each instance of the Email Engine would run as a different Windows/AD accounts so you could configure the Outlook mail properties for each MAPI mailbox.
You probably could get tricky and create a script that would start the email engine via the EmailStart.bat batch and use the Run As command to run the batch as different accounts.
I haven't tried this but I don't see why it wouldn't work. You should be good as long as the Email Engine starts with the Windows account that has the Outlook mailbox configured for the account.
ALTHOUGH... After writing this out I wonder if it would be an issue having multiple Email Engine instances trying to reference the same AR System Email Mailbox Configuration? Sounds like a fun test that unfortunately I will not have time to try for a while.
Good idea, worth trying but as soon as we try to add one more new incoming mailbox with MAPI, ar server throws an error message saying that only one incoming mailbox is allowed for MAPI protocol.... Yeah, it looks like you would need to turn off the filter that doesn't allow multiple MAPI incoming records. I suspect each Email Engine process would complain about not being able to open the other Email Engine processes' MAPI mailbox. It might just log it, it might just die
I wonder if there is setting that can be used in EmailDaemon.properties to specify the configuration form used?
If multiple email engines arree going look at one mailbox for incoming traffic clearly we expect issues (and should be strongly avoided) as below:

If the setting on exchange is set to delete email after being asked off the exchange server or fetched off the exchange, then unless synchronization is done by exchange (which I doubt) same email would be possibly picked by multiple email engines. Don't see a benefit of doing that.
If follows that we will see reprocessing of a modify action, again not called for.
If the issue is about multiple mail engines sitting on one box and monitoring distinct mailboxes and if protocol is set to MAPI, this will not work due to profile for mailbox getting set. Basically outlook profile will associate with one mailbox, basically the first one which gets configured
You can go for many Incoming mail box with the help of the pop3 protocol with many email account. As for as your email account is concerned then you can create the email profile(remedy customize applicaton) that will be for the email from where email is coming from and then it will be process the applicaton according to the defined form based on the work flow.
eg: if email is like a then push the value to form ax
if email id is coming from b then push the value to form b.
Why to define custom application or forms ? Won't multiple mailboxes work for OOTB applications/forms??

You are absolutly correct . It works on the OOTB functionality.
I was talking about the custom application . For the OOTB Functionality we can configure the multiple mailbox and it will work perfectly.
For any email engine related issue he can check the stdout.log and stderr.log.
Basic idea is to introduce the basic functionality of advance configuration on ar system email mail box configuration to KC then only he would have clear picture on email engine.
