As far as I know, the PBM console does not display Incident Tickets (HPD:Help Desk).
Do you mean the "copy function" as a new problem in the incident ticket? If yes, activate the filter log, there you see the filters that copy exactly these values from the incident into the problem. You deactivate them and the fields remain empty.

For create association to problem from Incident those are active links of workflow
For create association to incident from Incident this only active links of the workflow

I disabled these Active Links
then in the HPD:Help desk Form
I select in the menu to create a problem rattached to a incident but the operationals categorization are still fed in the probem FORM :-(
