The entire directory
Look for documentation like this. It will show you what directories that the component might be located in. Generally, you're going to exclude the entire folder of the installation path as well as your temp/tmp directories. You'd want to do this for all sub components like Java and Tomcat as well. This question would have a different answer for each component that you're asking about.
Now I don't think "daily" or "weekly" scans will make a impact at all, so feel free to continue to do the periodic scans (assuming they're not during heavy working hours). But, what will cause a issue is when "realtime" scanning is put into place. Each "monitoring" application (and I say that because there are other non-anti-malware applications that will do the same thing) will treat this differently. Here are some of the key players though:
I'm sure there might be better documentation out there than what I just linked, but this gets you 75% of the way there and you can work with your security/system admins on the last 25%.

We have observed in our clients environment where antivirus installed on server blocks BMC AR Server Services to start which led to outage many times. Like LJ LongWing mentioned, We have also excluded BMC Software entire directory from antivirus.
