You are right on fiends. You may need a support ticket to get exact data based on object type.
I have just noticed the behavior is not the same when we are Cloning an incident from the console. All fields are well copied.
What is then the difference between Copy from the Portal and Cloning from the console?
Some process builders/ Flows will not be run the same way?
I think, when ticket is cloned on self service portal and portal is used by end users. So from end users perspective, they needs to copy the description and category etc. For end users these two fields are important.
Remedyforce console is used by staff members, so he/she might needs to copy other data than description and category field.
From the users respective ticket cloning functionality is implemented as per my knowledge.

From my last tests, copied fields seem to be the one displayed into the incident layout used into the SSP.
Cloned fields from the incident console are the one the staff profile can edit; in our case most of them.
Does it make sense?
Yes, you are correct.
