The echo $PATH wont work even when mapped to root. You may have to grep /etc/.profile for the path.
well, if you run 'nexec server echo $PATH', then $PATH will be expanded before the nexec happens. so you should instead run something like:
nexec server sh -c "echo \$PATH"

to get env variable PATH, you need run in context of user. you can not get PATH of presently working users
nexec server "su - <user> <[shell]> -c echo \$PATH"
shell is optional
Path variable can be set in different ways.
