What do you see in Email Engine Error log after it hangs?----E:\Program Files\BMC Software\ARSystem\AREmail\Logs\stderr.log
Did you tried Enabling the Email Engine Debug Logging for more details?
Locks-Hangs-Freezes..... something like it goes to halt and needs a restart else none of the notifications go out.

What are the exception in logs file.?
Can you please share log file if possible as well .
How many entries are there in below forms ? If the number is huge then I will suggest to delete these entries.

- AR System Email Attachment
- AR System Email Error Messages
- AR System Email Error Logs
Make sure you have the settings to delete the sent messages from the form
Make sure that the polling interval is set correctly.
For a better performance you can set your email engine on private queue.
Check if the parameters in emailDaemon.properties file are set as recommended for performance.
You can try increase the java heap size on email server.
Also as suggested by others check in the email logs for any specific cause.
