Go into the ‘rules view’ of your compliance job result and fine the rule you want to set an exception for and do it there (all servers for that rule). Or I believe you can either do a multi-select, or when the exception editor comes up you can add additional components (servers) to the exception.

I hadn't tried that way. I did figure out another way to do it. there are probably several. Here's what I did, proven on Nov 8:
Create "Component Smart Group" in "Components" Workspace named "TEMPLATE.NAME_equals_XYZ"
Create and Run Component Discovery Job.
Results end up in Smart Group "TEMPLATE.NAME_equals_XYZ"
Create a "Job Smart Group" in "Jobs" Workspace named "XYZ_No_Exceptions"
Create and Run Compliance Job with no exceptions.
Results end up in Job Smart Group named "XYZ_No_Exceptions".
Add Exceptions in the "Components Templates" Workspace by doing a multi-select in the Content Pane as you suggested.
Create a "Job Smart Group" in "Jobs" Workspace named "XYZ_with_Exceptions"
Create and Run Compliance Job with exceptions.
Results end up in Job Smart Group "XYZ_with_Exceptions"
